GIGI’S BEST EVER ARTICHOKE DIP

This heaven sent dish was discovered in New York City, from a New Yorker who served it up pre-dinner, by the fire to a very elegant crowd in her Upstate New York Country Estate. She generously divulged the tightly held recipe to her Australian friend knowing she was heading home to Australia soon. You can’t believe how simple the recipe is for such a sumptuous result. The housekeeper did have the night off after all.

BUY

  • ¾ cup grated gruyere cheese
  • ¼ cup grated parmesan cheese
  • 400g can artichokes, drained and chopped
  • 1 cup egg mayonnaise
  • 1 lemon, zested and ½ juiced
  • Cayenne pepper or Tabasco sauce to taste

DO

Preheat oven to 190 ° C

Mix gruyere and parmesan cheeses together to make 1 cup. Mix artichokes, mayonnaise, zest, juice, cayenne pepper or Tabasco sauce and ¾ of the cheese mixture. Spoon into a small ovenproof dish. Sprinkle remaining cheese on top. Bake for 25 minutes or until bubbly and brown.

Serve hot, straight out of the oven with any plain cracker, pita chip or crusty bread.
Serves 6.

TIP: Double the recipe as there are always cries for “more please”!
